Egusi Soup is one of the most popular and beloved soups in Nigerian cuisine, particularly among the Yoruba, Igbo, and Delta people. The soup is made from egusi seeds, also known as melon seeds, which are ground into a paste and used as a thickener. It is a rich, hearty dish often served with swallow foods like Eba, Pounded Yam, Semovita, or Fufu.

Egusi soup is characterized by its rich texture, spicy flavor, and ability to be customized with various proteins, including meat, fish, or poultry. It is a nutritious dish packed with vitamins, healthy fats, and protein.


Key Ingredients:

  1. Egusi Seeds – The main ingredient; these melon seeds are ground into a powder or paste.
  2. Palm Oil – Adds richness and a reddish color to the soup.
  3. Meat – Typically beef, goat meat, or assorted meats.
  4. Fish – Stockfish, dry fish, or smoked fish for added flavor.
  5. VegetablesSpinach, ugu (pumpkin leaves), or scent leaves are commonly used.
  6. Onions – For flavor.
  7. Scotch Bonnet Pepper – Adds heat and spice to the soup.
  8. Ground Crayfish – For a unique, savory flavor.
  9. Seasoning Cubes – For seasoning.
  10. Salt – For seasoning.
  11. Water – To adjust the consistency of the soup.

Preparation:

  1. Prepare the meats – Cook the meats and fish (beef, goat meat, stockfish, smoked fish, or chicken) in a pot with seasoning cubes and salt until tender.
  2. Prepare the egusi paste – Blend or grind the egusi seeds into a smooth paste using water or stock from the cooking meat.
  3. Fry the egusi paste – In a separate pan, heat palm oil and fry the egusi paste until it changes color and thickens.
  4. Add the cooked meats and stock – Add the cooked meat, fish, and stock to the egusi paste.
  5. Add vegetables – Stir in the spinach, ugu, or scent leaves and cook for a few more minutes.
  6. Simmer and adjust seasoning – Allow the soup to simmer and adjust the seasoning with salt, seasoning cubes, and pepper to taste.

How It’s Enjoyed:

  • With Swallow Foods – Egusi soup is traditionally served with Eba, Pounded Yam, Fufu, or Semovita.
  • With Rice – Some people enjoy it with white rice or fried rice.
  • As a Meal on Its Own – It can also be enjoyed as a standalone meal when served in large portions.
