- Scotch Bonnet Pepper – Adds heat and spice to the stew.
- Meat and Fish – Beef, goat meat, stockfish, dry fish, or chicken are commonly used.
- Crayfish – Ground crayfish adds depth to the flavor.
- Seasoning Cubes – For seasoning the stew.
- Garlic and Ginger (optional) – Adds a bit of aromatic flavor.
- Salt – For seasoning.
Preparation:
- Cook the meat and fish – Season the meat and fish, then boil or cook them until tender. Set aside the cooked meat, stockfish, and fish.
- Prepare the tomato base – Blend tomatoes, onions, and pepper, and fry the mixture in palm oil until the oil separates from the tomato sauce.
- Add crayfish and seasoning – Stir in ground crayfish, seasoning cubes, and salt to the tomato mixture.
- Add cooked meat and fish – Add the meat and fish to the sauce and let it simmer.
- Add the greens – Stir in the spinach or other leafy greens and cook until tender.
- Simmer and adjust seasoning – Allow the stew to simmer for a few more minutes, adjusting the seasoning to taste.
How It’s Enjoyed:
- With Swallow Foods – Efo Riro is traditionally served with Eba, Pounded Yam, Fufu, or Semovita.
- With Rice – It can also be enjoyed with white rice or fried rice.
