Moroccan Briouat (also spelled Briwat) are traditional Moroccan pastries that can be either savory or sweet. They are made by filling thin sheets of dough, such as warqa (similar to phyllo dough), with a variety of ingredients, folding them into triangular or cylindrical shapes, and then frying or baking them until crispy.


Types of Briouat:

  1. Savory Briouat:
    • Filling Options:
      • Meat: Minced beef, lamb, or chicken.
      • Seafood: Shrimp, fish, or a mix with vermicelli noodles.
      • Vegetarian: Spinach, cheese, and vegetables.
    • Seasonings: Garlic, onions, herbs, and Moroccan spices like cumin, paprika, and cinnamon.
    • Served as appetizers or snacks, especially during Ramadan or special occasions.
  2. Sweet Briouat:
    • Filling: Almond paste flavored with orange blossom water, sugar, and cinnamon.
    • Coated in honey and sprinkled with sesame seeds.
    • Popular during celebrations and holidays.

  • Folding Techniques: Shaped into triangles, cylinders, or cigars.
  • Cooking Methods:
    • Fried: For a crispy texture.
    • Baked: For a lighter version.

Serving Style:
