The name translates to “white alcohol” or “white spirit.” It is a potent drink and a significant part of Chinese culture, often consumed during festivals, celebrations, and business meetings. - Baijiu typically has a high alcohol content, ranging between 35% and 60%.

- It is made primarily from grains such as sorghum, wheat, barley, rice, or corn.
3. Fermentation Process:
- Baijiu uses a unique fermentation method involving a starter culture called qu (曲). This moldy cake contains various microorganisms that convert the grains into alcohol.
4. Flavors and Styles:
- Baijiu comes in various flavor profiles, categorized into aromas:
- Sauce Aroma (酱香, jiangxiang): Rich and umami-like, often compared to soy sauce. Example: Moutai.
- Strong Aroma (浓香, nongxiang): Fruity and floral with a strong punch. Example: Wuliangye.
- Light Aroma (清香, qingxiang): Delicate and subtle, with a clean taste. Example: Fenjiu.
- Rice Aroma (米香, mixiang): Mild and sweet, with a hint of rice fragrance. Example: Guilin Sanhua.
5. Consumption:
- Baijiu is traditionally served neat at room temperature in small shot glasses.
- It is often consumed in toasts and sipped slowly during meals or social gatherings.
6. Cultural Significance:
- Baijiu is an integral part of Chinese hospitality and etiquette. It is customary to propose toasts during meals, and refusing a toast might be seen as disrespectful.
- It plays a role in ceremonies, ancestral offerings, and traditional medicine.

- Kweichow Moutai (贵州茅台): Known for its sauce aroma and premium reputation.
- Wuliangye (五粮液): A strong aroma Baijiu made from five grains.
