Afghan - Kabob


Afghan Kabob is a flavorful and popular dish in Afghan cuisine, consisting of marinated meat grilled on skewers over an open flame. The dish is known for its simplicity, rich flavors, and smoky aroma. It is a staple at family gatherings, celebrations, and Afghan restaurants worldwide.


Types of Afghan Kabobs:

  1. Lamb Kabob (Kebab-e-Gosht):
    • Tender chunks of lamb or mutton marinated in a mixture of garlic, onion, yogurt, and spices like cumin, coriander, turmeric, and black pepper.
  2. Beef Kabob:
    • Made with beef cubes, often marinated with similar spices as lamb kabob. The marinade may also include lemon juice or vinegar for tenderness.
  3. Chicken Kabob (Kebab-e-Murgh):
    • Chicken pieces, marinated in yogurt, garlic, and spices such as paprika, turmeric, and coriander, grilled to juicy perfection.
  4. Chapli Kabob:
    • Spiced ground meat (usually beef or lamb) mixed with onions, tomatoes, green chilies, and spices, shaped into flat patties and shallow-fried. This version is not skewered but is a popular variation.
  5. Seekh Kabob:
    • Minced meat (lamb or beef) mixed with onions, garlic, and aromatic spices, shaped around skewers, and grilled until tender.

Key Ingredients:

  • Meat: Lamb, beef, or chicken are most common. Vegetarian options may include grilled vegetables like eggplant or mushrooms.
  • Marinade: The marinade typically includes yogurt, garlic, onion, lemon juice, and a blend of spices to infuse the meat with flavor and tenderness.
  • Spices: Cumin, coriander, turmeric, paprika, and sometimes cardamom or cloves.

Preparation:

  1. Marinating the Meat:
    • The meat is cut into bite-sized pieces and marinated for several hours or overnight for maximum flavor.
  2. Skewering:
    • The meat is threaded onto skewers, sometimes alternating with pieces of vegetables like onions, tomatoes, or peppers.
  3. Grilling:
    • Kabobs are traditionally cooked over hot coals or a charcoal grill, which gives them a smoky, charred flavor.

Serving:

  • Afghan Kabob is typically served with:
    • Afghan Naan: Flatbread to wrap the kabobs.
    • Challow: Plain white basmati rice.
    • Kabuli Pulao: For a more elaborate meal.
    • Chutneys or Yogurt Sauce: Mint or garlic-based sauces for added flavor.
    • Salad: Fresh vegetables or pickled accompaniments.
