Made from ground beans, usually black-eyed peas, the dish is cooked by steaming the mixture in banana leaves, foil, or containers, creating a soft, compact, and savory texture.


Key Ingredients:

  1. Black-eyed Peas – The primary ingredient. The beans are typically peeled and ground into a smooth paste.
  2. Onions – Adds flavor to the base of the dish.
  3. Pepper – Often scotch bonnet or tatashe (sweet peppers) for a spicy and savory kick.
  4. Vegetable Oil – For frying the spice mixture and enriching the flavor.
  5. Seasoning Cubes – To enhance the taste.

  7. Eggs – Sometimes boiled eggs are added inside the Moi Moi before steaming, adding richness.
  8. Fish or Meat – Optional; you can add cooked fish, ground beef, or chicken.
  9. Salt – For seasoning.
  10. Water – To mix the beans paste to the desired consistency.

Preparation:

  1. Soak and peel the beans – Soak the beans to soften them, then peel the skins off, or use peeled black-eyed peas (which can be purchased in stores).
  2. Grind the beans – Blend or grind the beans into a smooth paste using water.
  3. Prepare the seasoning mixture – Blend onions, pepper, garlic, ginger, and seasonings. Fry this mixture in oil until fragrant and well-cooked.
  4. Mix the beans and seasoning – Combine the ground beans and the seasoned pepper mixture, adding salt, seasoning cubes, and any optional ingredients like fish, eggs, or meat.
  5. Steam the Moi Moi – Pour the mixture into banana leaves, foil, or a container and steam for 45-60 minutes until firm and cooked through.
  6. Serve – Once the Moi Moi is cooked, remove from the steamer and allow to cool slightly before serving.
