Zaalouk is a popular Moroccan dish made from eggplants and tomatoes. It is a type of cooked salad that is often served as a side dish, appetizer, or part of a mezze platter. Ingredients:

The main ingredients of Zaalouk are:

  • Eggplants: Roasted, grilled, or boiled and then mashed or finely chopped.
  • Tomatoes: Peeled, seeded, and chopped or grated.
  • Garlic: Minced or grated for flavor.
  • Spices: Commonly includes paprika, cumin, chili powder, and sometimes ground coriander.
  • Herbs: Fresh cilantro and parsley are often used.
  • Olive oil: For richness and to bind the flavors together.
  • Lemon juice: Optional, for a hint of acidity.

Preparation:

  1. Prepare the eggplants: Roast, grill, or boil the eggplants until soft. Remove the skin if desired and mash the flesh.
  2. Cook the tomatoes: Heat olive oil in a pan, then sauté the garlic and add the tomatoes. Cook until the mixture becomes saucy.
  3. Combine: Add the mashed eggplants to the tomato mixture, then season with spices and mix thoroughly.
  4. Simmer: Let the mixture cook on low heat, stirring occasionally, until it becomes a thick, cohesive paste.
  5. Finish: Stir in chopped herbs and a drizzle of olive oil. Adjust seasoning to taste.

Serving:

Zaalouk is typically served at room temperature, garnished with fresh herbs and a drizzle of olive oil. It’s delicious scooped up with warm crusty bread or pita. Its smoky and spicy flavors make it a comforting and versatile addition to Moroccan meals.
